A playful, radiant co-ferment from the high-altitude slopes of the Gredos Mountains, this chillable red blurs the line between a deep rosado and a light, earthy red. Crafted by Daniel Ramos, one of the leading voices in Spain’s natural wine movement, IB Sunset is a blend of 60% Garnacha and 40% Jaén Blanco—an obscure native white grape—fermented wild and bottled with minimal intervention.
Hand-harvested, destemmed, and fermented for 45 days with indigenous yeasts, the wine rests on its lees for 5 months in stainless steel, unfined and unfiltered, with only a whisper of sulfur added at bottling. What emerges is vivid, unpolished beauty: floral aromas of violet and wild herbs give way to a core of red berries, black cherry, and baked spice, with earthy undertones and a streak of mountain minerality that lends a subtle, saline finish.
Light in body but full of personality, it’s fresh, funky, and quietly complex—the kind of wine that reshapes conversations. Serve slightly chilled (16°C) with charcuterie, paella, grilled vegetables, smoked salmon, lamb skewers, or crumbly goat cheese.
