In the Central Loire Valley of France, there’s a small village called Sainte Gemme where the Pinot Noir grapes for this wine are grown in clay and limestone soils. The wine gets its light pink color from letting the grape skins briefly mix with the juice before they are gently pressed and fermented. The wine’s smooth texture comes from aging on fine lees before bottling.
