From the hills of Swabia in southern Germany, this wildly expressive saignée of Trollinger—known across the Alps as Schiava—is crafted by Jochen Beurer, a former European BMX champion turned biodynamic wine savant. His approach? Nothing short of alchemy. Minimal intervention, native yeast fermentation, hand-harvested fruit, and a touch of rebellious energy turn what could be a humble red into something borderline gravitational: a wine that floats.

This is “Alto Swabia”, not by politics but by spirit—cool-climate red winemaking at its most delicate, soulful, and electric. Grown in clay soils and made with biodynamic intention, this Trollinger blushes with a vibrant watermelon hue, offering up a melange of ripe red fruit—strawberry, cherry skin, raspberry—with a mineral pulse and saline lift.
