Tasting Notes:
Clear Skies “Fear No Bolts” is a distinctive Greek orange wine from Kontozisis Organic Vineyards. The blend combines aromatic Malagousia with structured Xinomavro and mineral-driven Assyrtiko. With extended skin contact and wild fermentation, the wine develops vibrant aromas of honeysuckle, apricot, bitter orange, lemon, tangerine, peach, cardamom, and white tea. The palate is dry and medium-bodied, with refreshing acidity, gentle tannins, subtle oiliness, citrus peel, green tea, and a long savory-mineral finish.

Winemaking:
The grapes are organically farmed and hand-harvested, then fermented separately using indigenous yeasts. The wine receives approximately 15 days of skin contact and is matured on its lees in stainless steel, with minimal sulfites and no fining or filtration.

Food Pairing:
Excellent with grilled fish, smoked seafood, lemon-roasted chicken, lamb chops, roasted vegetables, Mediterranean cuisine, spicy Asian dishes, mezze, and flavorful cheeses. Its acidity, texture, and savory character make it particularly versatile with rich or spiced foods.
