The Echeverria family first came to Chile in the 1750’s from Basque Country. They planted pre-phylloxera vines of French noble grapes in the Mediterranean climate of the Central Valley area. This Pinot Noir rosé from ungrafted rootstock produces delicate flavors of white peach and peonies. A splash of acid appears with the bone dry finish; the rosé of summer dreams. Perfect for scallop ceviche or salmon with a dill pesto sauce. Not good for spice.
