Winemaker Jo Pithon pioneered natural wine making in the Loire Valley beginning in the late 1970s. This bottle is biodynamic, as farming techniques are implemented in conjunction with the lunar calendar. The cuvée name Mozaïk references the marbled soils found in Anjou; in this case limestone and slate. Juice for this wine rests in oak vats for 10 months and spends another 4-8 months in underground tanks. This wine offers a silky, medium bodied mouthfeel with notes of straw, honey and yellow apples with a finish of refreshing stone and baking spice. Pair with a savory tart of tomato and ricotta.
