Mukai Shuzo Inemankai Genshu NV
The Mukai Shuzo sake brewery has been in operation since 1754. Currently head brewer Kuniko Mukai is pushing boundaries with her natural and creative style sakes. The ancient red rice varietal Murasaki is used for this fresh sake style that resembles rosé in color and flavor. It is rare to see sake made with red rice today, but it is a traditional provincial style that has been enjoyed for centuries. Flavors of red berries and vanilla on the palate with plenty of acid make this sake perfect to pair with savory and sweet dishes. Try is with a sweet and sour chicken dish with lotus root and eggplant.
