Winemaker Chad Westbrook Hinds employs philosopher Masanobu Fukuoka’s farming techniques to his plots in the California Alps. Fukuoka was a pioneer of permaculture, a design principle that incorporates agricultural and social aspects to establish renewable farming. Mondeuse is one of the ancient grapes of Savoy. This wine has a body approaching medium with dark flavors of earth, leather, blueberries, black pepper and smoke. With a fair amount of acid and crunchy tannic structure, this makes an excellent food wine. Pair with gamey meats like rabbit with a side of creamy gratin.
