Alice Bouvot is the owner and operator of Domaine de L’Octavin in the Arbois region of Jura. There, she tends to 5 hectares of biodynamically farmed vines that grow wildly and free with other plants, insects and animals. This cuvée is mainly whole cluster Poulsard that ferments in direct press Chardonnay for one and a half months in stainless steel. This is a light bodied wine with flavors of brambly strawberry, cherry, black pepper and oregano. Poulsard is a Jura rarity known for its acidic brightness. The use of Chardonnay as a blending agent softens the wine, giving it a bright but opalescent character. This wine needs a slight chill.

NATURAL
