Ripasso in Italian means “to go over”. This is made with the dried skins of another wine called Amarone. This wine ferments with dried skins using natural yeasts in large Slavonian and French barrique for 18 months and goes through full malo. Aromatics of cherries, cranberries and stewed fruit with violet and leather on the finish. This is a bright, complex wine with fullness from oak influence. Pair with duck or mushrooms.
