MontRubí L’Ancestral Sumoll Pét Nat 2018
The Peris family founded their winery on a 19th century estate in 1984 and have been making traditional wines for the contemporary palate since. This bottle, made from indigenous Catalan grape Sumoll, is fermented in the ancestral pétillant naturel style. Already a delicate varietal, the Sumoll experiences very light maceration to produce this ultra light and very dry rosé. Flavors of white fruit and flowers are complimented by stone and saline. Just the way we like it. Perfect for butter poached fish.
