The ancient method of making naturally fermented cider in Basque reaches back 2,000 years. The method is protected by law and prohibits the addition of sugar or carbonic acid. This cider is crisp, with a slight zip of carbonation and ripe acid. Flavors of green orchard fruit are rounded by aging in kupelas—old oak barrels used specifically for cider. Try it with the traditional pairings of anchovies, salted cod, and steak.
