This is the most fun you can have without leaving your house. Although the Etruscan’s were making wine here in the 9th century, Umbria has yet to be highlighted for natural wine production, so we’re very excited about newcomers Evita and Stefano Eboli and their new project. Very old, native vines grow on a steep hillside of vulcanic tufo and limestone which gives this bottle pouncing minerality even on the nose. The wine spends 8 months in stainless steel which maintains fresh red fruit flavors. We like with spaghetti and meatballs!
