From the Muscadet region of the Loire, winemaker Fred Niger was an early pioneer of minimalism in winemaking beginning in the 1970s. These relatively young vines grow on metamorphic and granite rock and the maritime influence gives the wine a definite nerve, minerality and salinity. Grapes are fermented semi-carbonically in stainless steel and bottled with no sulfur. This natural expression of maritime influenced Cabernet maintains its nostalgic body while introducing newer flavors of nori, white pepper and cassis. Pair with red meat.
