This CDR was made with freshness and value in mind. Winemaker Remi Pouizin sources grapes from three organic estates as well as from his own plots to make this blend. After three weeks of maceration, grapes spend 8 months settling in concrete and stainless steel. These fermentation vessels keep the wine bold bodied but clean. Very dry with flavors of black cherry, plum and spice. A great pairing for red meats like venison and pork or bold vegetal flavors like shiitakes, kohlrabi and squash.
