Cati Ribot “Son Llebre” Ve d’Avior 2019
Winemaker Cati Ribot is a single mother and the only woman making natural wine in Mallorca. This astounding work ethic certainly shows up as terroir in her structured but bright wines. Cati starts her Callet (an indigenous varietal to Mallorca that reminds us of Gamay from Fleurie) in ceramic and is transferred to barrels to ferment for an additional 4 months. Flavors of underripe berry bramble, violets and saline. An excellent food wine, pair this with Mallorca staple arròs brut: saffron rice with pork and vegetables.
