Domaine des Ardoisières “Silice”
Nestled under the prolific Mont Blanc, the vineyards at Domaine des Ardoisières are nearly 2,000 years old. The area was tended first by the Romans and then salvaged and replanted in 1998. Brice Omont looks after the vines now, carrying out biodynamics and intensely laborious techniques in the incredibly steep estate. Silice refers to the silica rich soil in which the vines are planted, giving the wine an incredibly glacial minerality. Citrus and green apple flavors provide a perfect balance of acid to the body with a finish of alpine herbs. Drink with meaty white fish and crisp greens.
