Populis is a low intervention project based in California that focuses on making “real, living” wine. They source grapes from vineyards across Northern California that have high organic standards and older vines to produce structured but easy to drink wines. For this cuvée, grapes spend 10 days on skin and age for 7 months in neutral oak. Flavors of stone fruit and minerality with a zip of acid on the finish.
