85% Trebbiano Spoletino, 15% Grechetto
The Fongoli farm comprises 35 hectares of organic and biodynamic vines used to make traditional style wines, naturally. The Fongoli family has been making minimal intervention wines for three generations and their refined techniques allow them to make structured wines without any additional sulphur. Élevage is simple for this wine: the Trebbiano is macerated on skins for two days and then blended with the Grechetto and left to rest in stainless steel on the fine lees for a few months. Dry with a medium body, yellow orchard fruit flavors and herbs.
