Winemaker Baia Abuladze’s business plan includes making wine traditionally, slowly and without the expectations of a huge export. Disorienting in a Western setting, Baia doesn’t suffer from visions of grandeur about a huge operation. Rather, the grandness of her wines come from the unique details of taste and energy. This skin contact blend is cofermented in qveveri for 1 month. Flavors of orchard fruit and stone fruit with a light tannic structure and nutty finish. A great pairing for roast chicken, fried catfish, steamed green vegetables, and grainy breads.
