Albillo is found almost exclusively in the Galicia region of Northern Spain. It is a rich, aromatic grape similar to Verdejo and Albarino. Just like its red sister made from Garnacha, this bottle is ultra surprising. It is round with tropical and white orchard fruit flavors with unmistakable notes of dill, fennel and mint. Fruit is sourced from four different vineyards averaging 70 years. Soil is composed of granitic sand which imparts a mineral brightness to this bottle. Fruit is co-fermented and spends nine months in aged foudre.  This is a great food bottle to pair with raw seafood, squash or sausage stuffed peppers.
